Tonks’ attention to detail can be savoured in all the menus, from the cooked to order breakfasts, through the Brasserie steaks and the excellent a la carte dinners, all based on local ingredients that he has carefully sourced, including beef from a specially bred Angus-cross herd in the Rift Valley.
